Ingredients

1 pound flaked cooked white fish, cod or haddock

1-1/2 cups soft breadcrumbs

3 eggs, beaten

2 to 4 tablespoons water

1 medium onion, chopped (or 1 tablespoon onion powder)

2 tablespoons mayonnaise
-
1-1/2 teaspoons dry mustard

1 teaspoon dried parsley flakes
-
3/4 teaspoon salt
-
1-1/2 cups Italian seasoned breadcrumbs

2 tablespoons cooking oil
Directions
In a bowl, combine fish, soft breadcrumbs, eggs, water, onion, mayonnaise, dry mustard, parsley flakes and salt. Mix well. Shape into 12 patties, adding water if needed. Coat with Italian seasoned breadcrumbs. In a large skillet, cook the patties in oil 4-5 minutes on each side. Serve immediately with tartar sauce (recipe following), if desired.
Yields 4-6 servings.
Note: You may use canned salmon (14.75-ounce can); remove bones and shred.
For tartar sauce:
- 1/2 cup mayonnaise (or salad dressing)
- 3 tablespoons chopped sweet pickles
- 2 tablespoons chopped onion (or onion powder)
- 1/4 teaspoon Worcestershire sauce
- 1 teaspoon regular mustard
Combine all ingredients in a bowl; mix well.
This is a tasty, quick meal that’s economical. And, the sauce is very good on fish.
